Ingredients
200g Brie
600g New Potatoes, washed with skins on
300g Smoked Mackerel fillets
3 Sprigs of Fresh Thyme
300ml Double Cream
150ml Milk

Method
Slice the potatoes lengthways about 3mm thick. Break up the
mackerel into bite size pieces and check for bones. Remove
the thyme from the stalks. Mix the mackerel, thyme and potatoes
in layers in a 9” square ovenproof dish and season with
salt and pepper adding about 2/3 of the brie, cut into small
pieces in each layer. Mix the milk and cream together and
pour over the top. Bake in a preheated oven at 190°C to
200°C for about 45 mins to 1hr until the potatoes are
nice and tender. Remove from the oven and slice the remaining
brie and put on top to melt with the heat of the dish. Serve
with a green vegetable
Hints & Tips:
- Use Haddock instead of Mackerel
- Cooking potatoes before hand will reduce cooking time
- Why not replace the Brie with Camembert or Port Salut
