PRÉSIDENT BRIE AND MUSHROOM CREPE

 Président Brie and Mushroom Crepe

Type: Starter/ Quick and easy to do
Serves 4

Ingredients

- 4 crêpes (pancakes)
- 125g pack of oyster mushrooms
- 100g of halved button mushrooms
- 200g of Président Brie
- 150g sliced chestnuts
- 25g of butter
- 1 tablespoon of olive oil
- 2 cloves of garlic
- 2 tablespoons of Président Crème Fraîche
- some fresh thyme

Method

Melt 25g butter and 1 tbsp. olive oil in a large frying pan. Add 150g sliced chestnut mushrooms and 100g halved button mushrooms and fry over a high heat until browned. Add 2 cloves chopped garlic, 125g pack of oyster mushrooms and the leaves from 3 sprigs of fresh thyme and cook for 2 minutes. Add 2 tbsp. Président Crème Fraîche and seasoning and heat until just melted. Dice a 200g pack of President Brie, add to mushrooms then spoon into 4 warmed crêpes, garnish with extra thyme and serve with a watercress salad.

Trick and treat: You can replace the President Brie with Societe Roquefort or add some ham to the mixture
