Baked Cod with a Mediterranean Crust

Ingredients

4 cod fillets or loins
150g pack Discover Feta with Spanish Stuffed Olives
1 large tomato, deseeded and chopped
100g fresh breadcrumbs
1tbsp (15ml) parsley, chopped
1tbsp (15ml) basil, chopped
1tbsp (15ml) snipped chives
1tbsp (15ml) lemon thyme leaves, stripped from the stem and chopped
zest and juice of one lemon
salt and pepper
Serves 4

Method

  1. Preheat the oven to 220°C, 425°F, Gas mark 7. Lay the fish, skin side down, in the base of the foil lined roasting tin.
  2. Place the contents of the feta pack into a mixing bowl. Remove the olives and slice them. Add all the remaining ingredients, with the sliced olives, to the bowl and
    mix well.
  3. Divide the topping mixture equally between the four pieces
    of fish.
  4. Bake near the top of the oven for 20-25 minutes, until the crust is golden and the fish is just cooked through. Serve with wedges of lemon and fresh green vegetables.

Handy Hints:

To prepare the breadcrumbs, take scraps of unwanted bread and blitz in the food processor or blender.
Lemon thyme has a lovely citrus flavour that goes really well with fish, but don’t worry if you can’t find it, you can substitute with ordinary thyme instead.

Preparation Time: 20-25 Mins.
