BAKED PEACHES TOPPED WITH SLICES OF PINEAPPLE RING, GARNISHED WITH CRUMBLED AMARETTI BISCUITS AND FRESH MINT LEAVES.

 Baked Peaches with Amaretto Cream

Ingredients

4 ripe peaches, halved and stoned
1 pack Discover.. Pineapple Ring, cut into 8 equal slices
6 amaretti biscuits, crumbled
2tbsp (30ml) soft brown sugar
250ml double cream or marscarpone
4tbsp Amaretto liqueur
Serves 4

Method

  1. Preheat the oven to 220°C, 425°F, Gas mark 7. Place the peaches, cut side up in an ovenproof dish. Sprinkle over the brown sugar and half the Amaretto liqueur. Bake near the top of the oven for 15 minutes.
  2. Remove from the oven, top the peaches with a slice of Pineapple Ring cheese and sprinkle over the crushed amaretti biscuits. Return to the oven for a further 5-10 minutes, until the topping has turned golden brown.
  3. Lightly whip the cream and mix in the liqueur. Serve the peaches warm, with a generous dollop of cream.

Handy Hints:

Fresh redcurrants make a beautiful decoration for this dish. For the professional touch, lightly dust with icing sugar, just before serving.
If you don’t have Amaretto liqueur, you could replace it with brandy or peach liqueur.

Sweet Muscat.

Preparation time:10 minutes.

Cooking time: 20-25 minutes.
